I got some flak when I made this recipe on TV, but I'm not sure why. I was told that it was not proper cooking and that it was "not cheffy enough", but I totally disagree. It's just proof that simple, everyday ingredients can work very well if carefully put together.

SERVICES 4

1 small onion, chopped

2 cloves of garlic, crushed

Pinch of dried chilli flakes

365g can sweet corn

½ × 10 g vegetable stock cubes

100 ml of boiling water

2 tablespoons of corn flour

400 g cooked fusilli

Salt (optional)

freshly ground black pepper

sweet chili sauce for serving (optional)

  • Put the onion, garlic, chilli flakes and sweet corn in a small saucepan and add the stock cubes. Pour the boiling water up to the height of the corn and bring it to a boil. Simmer for 5 minutes.
  • Mix the corn flour with 3 tablespoons of water and stir into the boiling corn until it has thickened. Pour into a blender and stir until smooth. Pour this sauce over the warm pasta, season and stir well. Serve with a little sweet chilli sauce.
