Chunky sweet potato wedges
Add a couple of lunch boxes next to crudités, with a dip and a little parsley if desired
MAKES OVER 600G
Heat the oven to 220C / 200C fan / gas 7 and line the bottom of some large roasting pans with baking paper. Cut the ends of 600g sweet potatoes. Grate it finely Lemon peel. Peel 2 cloves of garlic and crush it into a paste. If the potatoes are large, cut them in half before cutting them into chunky 2 cm to 3 cm wedges. Throw them in a bowl with 3 tablespoons of olive oil, lemon zest, garlic and some spice. Spread the wedges in the dishes without touching them. Roast for 40-45 minutes until the edges are dark and blistered; there is no need to rotate them. Let cool down.
